My family and I spent our first Christmas in Spain in 2010. My husband, our daughter, my mother, and I had just settled down in a tiny apartment in the center of a small suburb of Valencia. What brought us to Spain? It's a very long story, I can only say it wasn't altogether a straightforward decision. Suffice it to say that, unlike past Christmases with all the family present, there were only five of us at the table. I love to cook and even more so when it is for a special occasion; but in this case, it was actually a challenge to cook for so few people.
