Adobo para Guajolote a.k.a. Adobo Turkey Rub

- 10 sprigs rosemary with stems removed
- 1 ½ tablespoons sea salt
- 8 cloves garlic with skins removed
- 1 tablespoon freshly ground pepper
- 1 cup olive oil
- zest one lemon
- Place all ingredients in a food processor and blend.
- Rub all over the turkey before placing it in the oven to roast.
- Soak a cheese cloth in the adobo and place it on the breast of the turkey while it’s cooking.
